ALMOND TOFU STIR FRY

1 lb tofu cut into 3/4 inch pieces
Sauce:
1/2 C soy sauce
1 tbs peanut butter
1 tsp onion powder
1/4 tsp garlic powder
1 tsp fresh, peeled, grated ginger root
Marinate tofu pieces in sauce while you chop and simmer the vegetables in a non-stick frying pan with a lid:
1/2 C water
1 lg green pepper, cut in 1 inch square pieces
1 lg onions, cut in to slices
3 stalks celery, cut in slices on the diagonal
1 8 oz can water chestnuts, drained & sliced
When vegetables are cooked to desired tenderness Combine:
2 tbs cornstarch
2 C water
1/4 C roasted almonds (whole or sliced) or peanuts ( whole or chopped)
Add the tofu marinade (but not the tofu) and the above ingredients.
Simmer while stirring until the sauce is thick.
Fry the tofu in a small amount of oil until browned on most sides.
Drain off excess oil and add to the other ingredients.
Serve over hot rice.
