Pueblo Potato Fajitas

This is a good use of a left over baked potato.

1 med potato

Bake potato in microwave for about 5 minutes or until fully cooked.

1 lg green pepper 1 lg onion 1 Tbs olive oil

Slice the green pepper and onion into thin strips.

Saute vegetables in oil in a 10-inch non-stick skillet over medium-high heat. Stir often until the vegetables are brown and tender.

4-6 corn or flour tortillas

In another 10-inch non-stick skillet, heat 4-6 corn or flour tortillas on the dry non-stick skillet until warm.

Place the warmed tortillas between 2 dinner plates with the top plate up side down over the bottom plate.

1 Tbs packaged power taco seasoning

Reduce the vegetable heat to medium.

Add the peeled potato and taco seasoning to the pepper and onions.

Mash the potato with a fork, working in the taco seasoning.

Heat until all of the mixture is warm.

Serve the potato/vegetable mixture folded or rolled in the tortillas with fresh salsa, shredded lettuce and chopped green onions if desired.
